This is a wonderful soup to make for a dinner party as it is delicious and super easy to make! You can start making it a day in advance and all you have to do 5 minutes before serving is adding seafood and dill, doesn't get easier than that. 

There's nothing more boring than having to spend most of your time in the kitchen when you have dinner guests so this is a perfect dish to serve. The soup can also be served as an appertizer, but it is very filling and will definitely stand by itself with some fresh baked bread.

Ingredients

 

1/2 stalk celeri

2 carrots

1/2 leek

1 clove crushed garlic

1 1/4 c water

2 tablespoons butter

1 14 oz can crushed tomatoes

1 1/4 c heavy cream

1 c white wine 

5g saffron

2 fish boullion cubes, Knorr

2 1/2 teaspoon salt

blackpepper and salt to taste

Seafood-

10 oz salmon

10 oz cod

6 oz shrimp, crayfish tails, lobster mussels or other shellfish, or a combination.

1. Grate carrots, celleri, finely slice leeks and add to pot with water and butter. Simmer for 10 min. 

 

 

 2. Add the rest of the ingredients except for seafood and dill. The soup can be prepared a day in advance this far.

3. Bring the seafood to room temperature and the soup to a boil.

4. Add the fish and shrimp and let simmer for 3-5 min. depending on the size of the shrimp. Do not overcook as the shrimp will get chewy. Take the pot off the heat as soon as it's done and add the fresh, chopped dill.

Serve with fresh sliced bread, enjoy!
