This is not a Swedish version of the traditional sweet and dense cheesecake! This is a very different dessert and really not a cake at all as it contains no flour, so it's gluten free. It is more like a pudding but we call it cheesecake because it contains cottage cheese.

This dessert is not very sweet at all so it works great with some preserve and a dollop of whipped cream and served lukewarm. There are many recipes out there but we really like this one, and it's super easy to make.

What sets it apart from other recipes is the addition of cardamon and vanilla sugar. The vanilla sugar has real vanilla bean in it. It's the small specks that you see. The cardamon brings out the almond flavor.

This is what you will need for 6 servings:

3 egg
4 tbsp sugar
1/2 C milk
1/2 C cream
16 oz (500gr) cottage cheese, small curd
1/2 tsp vanilla sugar
1/2 tsp ground cardamom
1/2 C almond flour
1/8 C sliced almonds

Turn the oven on at 375F. 

1. Beat the eggs and sugar until fluffy, then add milk, cream, cottage cheese, almond flour, cardamon, vanilla sugar.

2. Pour into a buttered oven safe dish, sprinkle with the sliced almonds and bake in the middle of the oven for approx. 1 hour.

3. Allow too cool to room temperature. Serve with whipped cream and your favorite preserve. We had ours with cloudberry preserve, it is not too sweet and is really good, but another favorite is lingonberry preserve.
